Apricot Coconut Raw Fruit Bars

1/4 cup Almonds or Cashews

3/4 cup coconut

1/2 cup Raisins, Cranberries or other preferred dried fruit

1/4 cup Cacao*

1 1/2 cup organic sulfate free dried Apricots

Method

Mix first 4 ingredients in the food processor for 30 seconds. Slowly add the Apricots one at a time until sticky. Place in a square pan. Place in the fridge for 1 hour and cut into bars. These not need to be stored in the fridge.

*cacao is raw cocoa. It has not gone through the roasting process.
