Super food, super fast, Chocolate Hemp Balls

I am always looking for food that is fast and easy to make that works with our busy life styles.  I start with a few basic ingredients and keep adding power foods to make a tasty nourishing dish or in this case a cookie.  I have my jars full and ready to go in my cupboard i.e. sprouted and dehydrated nuts, seeds and grains as well as my hemp, flax and chia seeds,  dried fruits, and my  cacao seeds and powders.  This ,makes it easier to throw ingredients together.  I am in love with these Balls.  I did dehydrate some to see the difference.  Think I prefer them raw but if you have a dehydrator put a few in and try for yourself.  I would love to know which ones you prefer.  Of course the benefit of dehydration is that you can keep them out of the refrigerator.  The flavour of the Cacao chips is enhanced which I think is a acquired taste

SUPER FOOD CHOCOLATE HEMP BALLS

1 cup soaked Cashews for 2 hrs, (or add hot water while you prepare rest of ingredients and add last)

2 cups Almonds *

2 cups dates

2 cups coconut

1 cup cacao chips

1/4 tsp Himalayan salt

1/2 cup hemp seeds

1/3 cup coconut oil softened

1 tsp Vanilla essence

Add all ingredients in a food processor , except the oil.  Mix until it looks like small crumbs,  Add Oil.  If it is too dry add water a little at a time until it forms a ball.  Using a scoop make balls and place in the refrigerator or dehydrate for 12 hours.

*All my nuts are pre -sprouted which means I have soaked over night or for 8 hours and then drained the nuts, rinsed and put in my dehydrator for 12 hrs to dry them out again.  This releases the enzymes for optimal nutrition.  You can use raw nuts unsprouted
