MOROCCAN-STYLE TOFU SALAD, almost Raw...
Moroccan-Style Tofu Salad
1 can chick peas, drained
1 cup diced cucumber
1/3 cup chopped cilantro
1/3 cup chopped mint
3 cups spiralized carrots
4 green Onions
Thinly sliced
1 block Tofu
6 cups local greens
½ cup chopped nuts
Dressing
1 tsp ras el hanout*
¼ cup Virgin olive oil
Salt, pepper to taste
1 tsp honey
Zest of lemon and juice of 1 lemon
Method
In a small bowl add all ingredients and whisk
Grilled Tofu
1 block of Tofu
1 can Coconut milk
1 Tbs lemon Juice
½ tsp Turmeric powder
½ tsp salt
Method
Cut tofu in blocks and add 1 can coconut milk with Turmeric and Lemon Juice and gently sauté in frying pan for 2 mins. Mix salad together.
Ras el Hanout
2 tsp coriander seeds
2 tsp cumin seeds
2 tsp cinnamon
2 tsp ground ginger
2 tsp paprika
1 tsp peppercorns
1 tsp Himalayan salt
1 tsp cayenne
1 tsp ground all spice
Place whole spice in a small skillet and dry-roast for 1 minute
Combine whole spices in a spice grinder and grind and add to rest of spice
