Raw Berry Banana Cookies
Once again I have been experimenting with my Cookies. Trying to find the perfect flavors, texture and crunch. I believe this is it. The first experiment produced what I considered Dog Biscuits, but my nephew grabbed them all and asked for more... Having thrown out the recipe I went back to the drawing board. I now have a lot of orders for these ones. I thought I would pass the Recipe on to you. They are made in the dehydrator but they can be made in the oven at 350 for 30 mins or on warm for 1 hr depending on your oven.
- 2 cups Oat groats Soaked over night to sprout
- 2 cups Buckwheat groats Soaked over night and sprouted
- 2 cups coconut flour You can grind desiccated coconut in your blender
- 2 cups Bananas crushed, can use pre-frozen bananas
- 1 tsp Cinnamon
- 1 tsp pure vanilla
- 1 tsp salt
- 3/4 cup dried fruit (cranberries, sultanas, dried blueberries, dried strawberries.)
- 3/4 cup coconut oil that has been melted over hot water
- 1/2 cup maple syrup (obt) can replace with 1 to2 Tbs of stevia leaf powde r
Drain the Oats and Buckwheat and grind in a food processor till smooth. Put in a bowl with the Bananas. Add the cinnamon, vanilla, salt, coconut oil, dried fruit and Maple Syrup and mix till well blended. Using a scoop put the balls on a dehydrator sheet or on a baking tray. Dehydrate at 118 deg for 24 hours.
The concept of using a dehydrator is to keep the heat low at 118 deg Fahrenheit. The low heat allows the enzymes and nutrients that are destroyed at higher temperatures to remain intact giving you a nutritious treat. When you soak seeds overnight the enzymes are released.
